JW Marriott Caribbean Latin America Celebrate the Culinary Spirit of Carnaval in the Final Episode of JW Marriott’s Chef’s Table YouTube Series
The Curated Videos Crosses the Caribbean and Latin America Featuring Locally-Inspired Gourmet Recipes & Techniques from JW Marriott Chefs in the Region
Weston, FL –January 20, 2016 – Embracing its passion for culinary, JW Marriott Hotels & Resorts, the global luxury brand part of Marriott International’s (NASDAQ: MAR) Luxury + Lifestyle portfolio, launched in the Caribbean and Latin America region The Chef’s Table video series on YouTube. These series showcased signature and local dishes and techniques from classically trained chefs from JW Marriott properties in Lima, Cancun, Santo Domingo, Bogota, Cusco and Rio de Janeiro.
The latest installment of the series features the JW Marriott Hotel Rio de Janeiro’s Executive Chef, Thomaz Leão. Chef Thomaz curated his dish sourcing local seasonal ingredients traditional to the region which included grilled namorado toped off with butter beans and savory confited plantain medallions. “Through creativity and combination of different local ingredients, foodies will now be able to upgrade their palate and enjoy their favorite traditional dishes with a creative twist,” said Chef Thomaz.
The Chef’s Table series debuted in Mexico and Peru with formally trained Chef Gonzalo Ruiz from the JW Marriott Cancun Resort & Spa and Chef Julio Ferradas from JW Marriott Hotel Lima. Chef Gonzalo Ruiz created a savory yellowfin tuna tartare with locally sourced fish and delicate touches of chimichurri, Mexican avocado and freshly baked flour tortillas. Subsequently, Chef Julio Ferradas prepared his signature stir-fried “paiche” tacu tacu, a contemporary twist on the traditional Peruvian dish made from a local fish.
For some Caribbean flair, the third video installment in the Dominican Republic featured Chef Sergio Delfino from the JW Marriott Hotel Santo Domingo. Chef Delfino created a fusion of Mediterranean and Caribbean with his octopus casserole marinated with achiote and aji panka, accompanied with traditional fried yucca dressed in black olives.
Exploring the South American region with a vallenato tune, Chef Dante Filosi and Chef Johan Castro, from the JW Marriott Hotel Bogota, prepared their interpretation of an arepa by combining truffled Colombian flour with lobster and crab layers.
